Hearty Mushroom Soup

Makes 4 to 6 servings

1 1/2 cup celery, chopped
½ cup green pepper, chopped
½ cup green onion, chopped
1 medium white onion, chopped
3 cups water
2 tablespoons flour
1 cup water
2 pounds mushrooms, sliced
1 cup skim milk
Pepper as desired
1 or 2 tablespoons sweet basil
Place first 4 ingredients in 3 cups water and cook 15 minutes in a stockpot.

Place flour and water in small jar. Close lid and shake to combine.

Add flour mixture and mushrooms to stockpot and cook 10 minutes.

Add skim milk and pepper, if desired.

Sprinkle sweet basil over soup and serve immediately.
