Kiwi-Banana Muffins

You can eat this great-tasting snack at breakfast time or any time. It’s quick and easy to make. Ask an adult to help you.

You Will Need:
• 1/2 banana, peeled and mashed
• 4 ounces fat-free cream cheese
• 2 tablespoons chopped walnuts
• 1 English muffin, split and toasted
• 1 kiwi, peeled and diced

Directions:
1. Wash your hands. In a small bowl, use a fork to mix together the mashed banana and the cream cheese. Add the walnuts and stir.

2. Spread the mixture on each half of the toasted muffin. Top the muffin halves with diced kiwi. Mmm … delicious!

The inside of the fuzzy kiwi looks like a beautiful green emerald. But the really amazing thing about this sweet little “jewel” is its nutritional content. One serving (two kiwis) provides:
• nearly two times the vitamin C of oranges;
• twice as much vitamin E as avocados, but without the fat;
• as much potassium as one banana;
• 5 grams of dietary fiber;
• folic acid and other vitamins and minerals necessary for growth.
